Pizza cartons are – as the name probably suggests – flat cardboard packages made with the intention of carrying pizza in them. This particular type of cartons is related to an issue that is not taken into account in the case of classic cartons – namely, the contact between the foodstuff and the cardboard. The issue of long-term contact of this particular type of food – characterized by high temperature, moisture and fatness – is important as it does not only affect our comfort and how it will maintain the integrity of this food product during potential delivery and storage hours. The question of what substances can be secreted into the pizza by soaking with high-temperature fatty substances is also absolutely crucial.
Under the influence of heat, toxic substances – benzene and naphthalene – can be released into the food, which may occur with lower-quality pizza boxes. It is worth paying attention to the fact that the requirements of the PZH certificate regarding the suitability of the packaging storing food for consumption do not take into account contact with hot and fatty foods. Research by scientists from the University of Milan shows that the release of the above-mentioned substances can occur already at contact with the temperature of 60 degrees Celsius. Moreover, it has also been found that the influence of these substances is what gives rise to the phenomenon of the distinct smell of the pizza in the carton and the pizza on the plate. Moreover, the presence of a substance abbreviated as DIPB was also found, the activity of which cannot be determined at present – but in high concentration it is potentially risky for the fetus of pregnant women.
Properly prepared pizza cartons have an inner layer of semi-parchment isolating the contents from the proper cardboard. Thanks to this, they prevent the release of moisture into the carton, both significantly improving the aesthetic and taste of the pizza and ensuring that no harmful substances get from the carton to the food.
